Chicken and Mushroom Quesadillas


  • 1 pound skinless, boneless chicken breast, diced
  • 1 (1.27 ounce) packet fajita seasoning (some fajita seasonings contain MSG so if you want a healthier alternative for seasoning see below)
    • If not using fajita seasoning then use:
      • 2 Tbsp chili powder
      • 1 Tbsp salt
      • 1 Tbsp sugar
      • 1 1/2 tsp onion powder
      • 1/2 tsp garlic powder
      • 1/2 tsp cayenne pepper
      • 1/4 tsp crushed red pepper flakes
      • 1/2 tsp cumin
      • Combine all these ingredients in a bowl to use to season the chicken breast
  • 2 green bell peppers, chopped
  • 2 red bell peppers, chopped
  • 1 cup of white mushrooms
  • 10 (10 inch) flour tortillas
  • 1 (8 ounce) package shredded Cheddar cheese
  • 2 Slices of bacon, cut into bits
  • 1 (8 Ounce) package of shredded Monterey Jack Cheese

Total Time: About 1 hour


  1. Preheat the broiler and grease a baking pan
  2. Spread the fajita seasoning onto the the chicken breast thoroughly and then put chicken onto baking pan and into broiler.
  3. Leave chicken in broiler until chicken is no longer pink, takes a little over 5 minutes
  4. While the chicken is cooking, begin chopping up the peppers and mushrooms
  5. After the chicken is done, preheat the oven to 350 degrees F
  6. Put some oil into a large saucepan on the stove on medium heat. Begin cooking the two bacon slices and cut into pieces
  7. While the bacon is cooking, cut the chicken into small cubes
  8. Add in the chicken, mushrooms and peppers into the saucepan. Continue slicing all the ingredients as they cook in the saucepan to get the pieces as small as possible. Let the ingredients cook for about 10 minutes in the saucepan.
  9. After the ingredients are finished cooking, take a tortilla and either wet it lightly with water or spread a light coat of oil on both sides (this allows the tortilla to crisp up better in the oven). After oiling both sides, lay flat onto a baking sheet and add layer the tortilla with cheese, chicken, bacon, mushrooms, and peppers. After adding in the ingredients, add another oiled tortilla to lay on top like a sandwich. Continue this process until you use all the ingredients.
  10. Bake the quesadillas in the oven until the cheese has melted; takes about 10 minutes.
