Cookie Butter Cookie Batch

Ingredients:

  • 1 jar of cookie butter
  • 1 large egg
  • 3/4 cup of light brown sugar
  • 1 1/2 tablespoons of vanilla
  • 3/4 cup of flour + 2 tablespoons of flour
  • 2 teaspoons of cornstarch
  • 1 1/2 teaspoons of cinnamon
  • 1 teaspoon of baking soda
  • optional, pinch of salt

Directions:

In a large bowl with an electric mixer, mix together the egg, cookie butter, vanilla, and brown sugar for 4-5 minutes on medium speed. If using a hand mixer it may take longer.

Next, add the flour, cornstarch, cinnamon, baking soda, and salt (optional) and mix for about a minute on low speed. If the dough is wet or sticky after mixing together then you should add a couple more teaspoons of flour. The dough should be soft and come together.

Using a cookie scoop, scoop out cookie mix and form into balls and set aside on a large plate to cool. After forming all the balls of cookie dough, put the plate of cookie dough into the refrigerator to cool for at least three hours.

After the cooling down process, turn oven on 350 degrees F. Spray cooking sheet with non-stick spray. Place cookie balls about 2 inches apart on the cooking sheet and press the balls down slightly . Cook the cookie dough in the oven for 8 minutes, no longer than 9. The cookie dough will still be soft after the 8-9 minutes and then allow 5+ minutes for the cookies to cool down. The cookies will be soft and gooey when it’s time to eat.
