Stuffed Chicken Parmesan


  • Salt
  • 2 Chicken Breast
  • Flour
  • 2 Eggs
  • Bread Crumbs
  • Tomato Sauce
  • Basil Leaves
  • Parmesan Cheese
  • Mozzarella Cheese


Before cooking the chicken breast I sprinkled a little salt on both sides of the chicken breast. Next I cut the chicken breast in half not cutting all the way through, you should make sure the other side of the chicken breast is still attached. You want to cut the chicken breast enough so you have just a pocket of space to stuff it.

After creating the pocket in the chicken breast, stuff the pocket with mozzarella cheese. Make sure after you stuff the pocket you can close the opening on that side of the chicken breast.  At this point in the recipe I found it easiest to have one bowl of flour, one bowl of 2 eggs already beaten, and then one bowl of bread crumbs. Next, take the stuffed chicken and cover both sides of it with flour. Then dip the chicken breast in the eggs covering both sides of the chicken. Next cover the chicken breast in bread crumbs, make sure the entire chicken breast is covered.

Next put the chicken breast into a sauce pan with oil, I prefer to use coconut oil since it’s a healthier option, but feel free to use whatever oil you prefer cooking with. Keep the stove on medium and allow the chicken the cook thoroughly. Allow time for both sides of the chicken to brown. Using a cooking thermometer, insert the thermometer in the center of the chicken to check if it is finished cooking. If the temperature is 160 degrees Fahrenheit the chicken should be done. If you find that outside of the chicken is browning a lot quicker than the inside is cooking then turn the heat level down to low.

After the chicken is finished cooking, cover the bottom of a cooking pan with 3 cups of tomato sauce. Then add the stuffed chicken on top of the cooking pan now covered with tomato sauce. Next, add 1/3 cup of tomato sauce to the top of the stuffed chicken . Then sprinkle some Parmesan cheese on top, I suggest at least a 1 and 1/2 spoonfuls of Parmesan cheese on top just to make it more cheesy. Then add some basil leaves, I used about a teaspoon or less of basil leaves on mine. Finally, turn the oven on 350 degrees F/180 degrees C and once the oven has warmed, put the pan of stuffed chicken inside the oven to cook for 20 minutes.
